THE renowned chef Stephen Terry at the Hardwick uses local honey from the Apiary of Les and Gill Chirnside in a number of his signature dishes. As a result of this connection members of Gwent Beekeepers Association decided to hold their annual dinner at the Hardwick last Tuesday and they were not disappointed. They dined from an exciting menu which ranged from Carpaccio of rare roast Herefordshire beef to Colston Basset Stilton and pear with Dandelion for starters.Main courses included Gower mullet, braised beef and oxtail under a puff pastry lid and Pasta Rotolo of Roast Butternut for vegetarians.Of course puddings had to include Les and Gill's honey in the Ice Cream with the Warm Triple Chocolate, Nut and Raisin Brownie. There was also an amazing Panetonne Bread & Butter Pudding Brulee. The Beekeepers went home replete and inspired to use honey more in their cooking after such a wonderful gourmet meal produced by Stephen and his excellent team.
